Just tell the kids you are making nachos and they will eat them— promise!!

Ok so I make these often and don’t really have a “recipe”… so I don’t have measurements but you can wing it I know you can!!

So this is how I make them:

Cut cauliflower into small florets.

I like to parboil the cauliflower for about 3-4 minutes before roasting .

After parboiling , drain well , and toss with about 1-2 Tbsp of Olive oil, coconut oil, avocado oil.. (whatever you prefer), sea salt, ground pepper, paprika , cumin, chili powder, garlic powder (or freshly minced garlic) , a little oregano and more salt!! (Like I said, I don’t measure I just shake a little here and there.. go easy on the chili powder (you can also add cayene if you like a little more heat), and paprika.. but I like cumin so I use a little more of that.

You could also use a taco seasoning if you have that on hand.. you don’t need that much though… I don’t like the flavor to be too overwhelming… think SUBTLE!

Throw it on a baking sheet top with finely chopped onion and green or any other color pepper , you could throw jalapeños on there too if you’d like!
Top with freshly grated cheddar cheese!
Throw in a 425 degree oven till cheese is melted and bubbly (about 10 minutes !!


(This is like an “un-recipe”… no measurements.. just wing it!! Believe me they will taste good no matter what!!)
